This week the kids and I made the cutest St. Patrick’s Day cupcakes! If you need a last-minute dessert for the holiday, you’ll love these rainbow cupcakes. You can use homemade or storebought cupcakes. Then whip up a big batch of frosting; we use plant butter and Great Value powdered sugar. I love using the Walmart Great Value brands, and have for years, because they’re great quality and budget-friendly.

Reserve some of your white frosting for “clouds” then use food coloring to dye the rest green for the “grass.”

Add rainbow candy in an arc to create your rainbow (we used AirHeads brand) then pipe some white clouds. You can also use marshmallows!

For an extra special touch, we made fondant pots of gold. I’ve also seen these made using chocolates wrapped in gold foil.

Skip the pot of gold and these rainbow cupcakes are perfect for any spring occasion, birthday party, you name it!
